Sushi (寿司, 鮓 or 鮨 sushi) is any food in Japanese cuisine made with vinegared rice. It may include raw or cooked vegetables, raw fish (刺身 sashimi) or other ingredients, and is typically served with soy sauce and wasabi (わさび or 山葵, 'horseradish paste').
In the West, sushi is often assumed to be raw fish, rather than the vinegared rice base on which other ingredients are served. No fish is necessary to serve sushi, and dishes typically include several sushi pieces with different ingredients, some without meat.
